A Whole Lot of Love

As it continues to snow outside this Monday, I’m enjoying my coffee and thinking back on all the love that this weekend brought. And there was plenty of it. Yesterday was the definition of a perfect day in my opinion. This is my third Valentine’s Day with Danny and I think this one was my favorite.

Here was a recap of our day!
I went wild with my Target dollar section heart shaped cookie cutters. French toast & an attempt at heart bacon. As you can see, it didn’t really pan out. Pinterest fail!! (it was yummy though!)

We hopped in the [freezing] car and drove out to see my sweet grandmother at the nursing home she lives at. My grandparents raised me, she’s the only one I have left so she means the world to me. We stopped on our way and got her this cute little rose plant to brighten up her room and some chocolate covered strawberries to brighten her sweet tooth ha. My grandmother LOVES when Danny comes to visit her, constantly calling him my husband (probably giving him heart palpitations and hives lol) and basically telling me how lucky I am to have such a handsome man in my life. I can’t say I disagree with her!
On our way home we thought we’d take another look at the couch we’ve been looking at for a couple of months. It being President’s Day weekend we were bound to find a good sale going on. Which we did and ended up buying this baby!
Our goal for the spring is to completely redo our living room space. Stay tuned because I’m definitely going to be posting like crazy about it. I’m so so excited!! The best part will be basically designing it around this GORGEOUS couch. I can’t wait for it to be delivered in a week 🙂
We decided (well I decided and I don’t think Danny complained) that we would cook dinner together this year and stay in. We have been watching Prison Break and I’m addicted, as I have mentioned 38472 times 🙂 We made steak, stuffed shrimp, asparagus, scalloped potatoes & strawberry shortcake kabobs. 
Cutting cheese into heart shapes is overrated and you waste too much cheese. Who wants that?!

Crab Cakes
From Grandmom Ruth’s kitchen (Danny’s grandmom)

1 lb lump crab meat
1/2 cup Italian style breadcrumbs or panko
(If you use panko, add 1 tsp parsley flakes)
3 tbsp. Old Bay Seasoning
1 tsp. dry mustard 
1 egg
1/2 cup mayonnaise 
2 tbsp. yellow mustard
1 tsp. Worscheshire sauce
Place crab meat, breadcrumbs, old bay and dry mustard in a medium mixing bowl and set aside.
In a measuring cup, whisk together egg, mayo, mustard and Worscheshire sauce. 
Pour into the bowl of “dry” ingredients and mix until combined. 
Form into small-medium sized “cakes” and broil in the oven until brown. Flip over crab cakes and brown on the other side. 
Easy peasy lemon squeezy (and a squeeze of lemon never hurt on a crab cake either! ha)
As you can see I used the crab meat mixture to make stuffed shrimp but the recipe above is good for both 🙂

Scalloped potatoes are straight out of a box and the asparagus is just roasted with olive oil and garlic salt
We drank the Boardy Vineyard Jazz Berry that we started the night off with during dinner but moved onto Jacob’s Creek Shiraz after. Jazz Berry is definitely a dessert wine, but wine is wine and we don’t care!

Strawberry Shortcake Kabobs
Adapted from SugarApron
2 boxes strawberries
1 box of white cake mix
3/4 cup of Greek vanilla yogurt
2 egg whites
1 1/3 cups of water
Fat Free canned whipped cream (fancy huh)
Combine the cake mix, greek yogurt, egg whites and water in a stand mixer
Mix until smooth and pour into a greased cake pan or dish. (9×13)
Bake at 350 for 20-25min until toothpick comes out clean or according to directions on the box.
Cut stems off of strawberries and halve them if need to in order to create uniform sizes.
Cut shortcake into 2-inch cubes after it is COMPLETELY cool.
Take skewer and alternate strawberries and shortcake cubes. (I like to do three or four of each per stick).
Once the skewers are made, I just squirt some super fancy canned whipped cream in dots over the strawberries.


I can’t stress enough how relaxing it was to just spend the evening with the love of my life, my puppies, and a glass of wine. 4 of my favorite things in life. I’m easy to please let me tell ya.

Danny has been my Valentine for 3 years now and I’m so lucky to have him by my side. He’s my best friend, he makes me laugh constantly and he loves me for exactly who I am. We balance each other out and I can’t wait to love on him for many more years to come. He’s my biggest support system and I’m truly blessed for that.
